Have a portfolio of famous portraits ( such as this one of Prince Charles and Princess Diana: http://www.famous-couple.com/pics/prince_charles-lady_diana_spencer.jpg ) and offer people the opportunity to have a portrait made in that style.

Here's a possible way to make money with portraits: approach small, local businesses (preferably family businesses) and offer to take photos of ALL the staff members so that portraits can be displayed on the premises to promote a "friendly and approachable" feel. Offer to write short biographies for each member.

Create a theme for different shoots. For example, recreate famous paintings where the person photographed is the subject of the painting - Mona Lisa, Laughing Cavalier etc.
